☁️ Cloud Cake (Blender Method)
Ingredients
- 200 g (7 oz) cream cheese, softened
- 50 g (3 tbsp) unsalted butter, softened
- 100 ml (7 tbsp) milk
- 4 large eggs, separated
- 70 g (⅓ cup) granulated sugar
- 40 g (⅓ cup) cake flour
- 10 g (1 tbsp) cornstarch
- 1 tsp vanilla extract
Instructions
1️⃣ Prep
- Preheat oven to 320°F (160°C)
- Line an 8-inch (20 cm) round pan with parchment
- Wrap outside of pan with foil (for water bath)
2️⃣ Blend the Batter
- In a blender, add:
- cream cheese
- butter
- milk
- egg yolks
- sugar
- vanilla
- Blend until completely smooth
3️⃣ Add Dry Ingredients
- Add cake flour and cornstarch
- Blend briefly just until combined
(Do not overblend)
4️⃣ Whip Egg Whites
- In a clean bowl, beat egg whites until soft peaks
- Gently fold whites into batter in 3 additions
- Use a spatula, slow and gentle to keep it airy
5️⃣ Bake (Water Bath)
- Pour batter into prepared pan
- Place pan inside a larger pan
- Add hot water halfway up the sides
- Bake 60–70 minutes
6️⃣ Cool Slowly
- Turn oven off
- Leave cake inside with door slightly open 15 minutes
- Remove and cool completely before unmolding
